SNICKERDOODLES

Basically a sugar cookie coated in cinnamon sugar, which I can’t even complain about because that always sounds incredible. It top five favorite cookies of mine, alongside a classic chocolate chip, cookies and cream, peanut butter chocolate chip & chocolate crinkle cookies. As long as one of these are present, there is not guarantee there will be any left to share.

Snickerdoodles was a cookie I didn’t try until I was probably a preteen; given I was never really a fan of a plain sugar cookie, simply because it seemed boring and nothing much to it. It wasn’t until I fully understood that this was so different from a classic sugar cookie, it is drenched in cinnamon sugar, which happens to be favorite topping of mine – donuts, pancakes, in oatmeal, applesauce and pretty much any fall dessert!

There are a few bakeries in my city that have REALLY good snickerdoodle cookies – one of which is walking distance is is a holy grail cookie place called, Anthony’s Cookies. All of their cookies are amazing and the snickerdoodle does not disappoint. Wanted to create a really good sugar cookie that is quick and easy but still tastes like a bakery style cookie.

I always equate these cookies to the holidays but honestly who doesn’t live a snickerdoodle year round? I know I do, and there are very few bakeries that I love them from. They arent a top choice when I see them at a cookie shop, but when I do see one that looks really appealing and tempting, it is the type of cookie I will definitely buy to try out as many as I can. I am always on the hunt for the best type of cookies and desserts to recreate!

Ingredients

  • SNICKERDOODLE DOUGH
  • 1 ½ cups flour

  • 1 ¼ teaspoon cream of tartar

  • 1 teaspoon vanilla extract

  • 1  egg

  • ½ teaspoon baking soda

  • ½ cup unsalted butter; softened (1 stick)

  • ¾ cups sugar

  • pinch of salt

  • CINNAMON SUGAR MIXTURE
  • ¼ cup sugar

  • 1 Tablespoon cinnamon

Directions

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper
  • In a bowl, mix together the dry ingredients – flour, baking soda, creme of tartar and salt; set aside
  • In the bowl of a stand mixer or with a hand held mixer, cream together the sugar and softened butter. Add the egg and vanilla and stir until combined
  • Add the dry ingredients and mix until just combined do not overmix
  • In a separate bowl, make the cinnamon sugar mixture by combining the cinnamon and granulated sugar
  • Use a cookie scoop to form the same size dough balls, roll them around the cinnamon sugar mixture and set on lined baking sheet
  • Bake for 8-10 mins
