CHOCOLATE CHIP COOKIES FOR TWO
Nothing is easier or more simple than having a recipe specifically to make only two large chocolate ship cookies. perfect for date night, girls night in or just to satisfy everyone sudden urge of a sweet tooth. They have a crispy outside with a gooey inside that is full of flavor and chocolate. It is so simple and easy to whip up in no time. It can even made about 6 smaller cookies if you have a few guests over.
This is a go-to recipe that so many of my friends and family use when all of a sudden it’s 7pm and your sweet tooth needs something and we just can’t fight it. Everyone has those nights or days where we just need something and baking and entire dessert seems too much of a hassle and not realistic. I created these this exact reason, we all get cravings and every once in awhile we just can’t fight them any longer.
The only downside about there only being two large cookies, is they are so good you could easily go for seconds but maybe thats a good thing if you’re only given the option to eat one cookie. You instantly regret not having baked my full batch cookie recipe, but remember this is plenty. It is a very large cookie, the size of your hand.
Be sure to add whatever you want to them to make them the best date night treat – m&ms, nuts, toffee, mini chocolate chips, crushed oreos, white chocolate chips, and so much more. So get your movie night in, wine night with the girls ready for these deliciously gooey yet crispy small batch cookies! I promise they will not disappoint your guests and everyone will love them!
TIPS:
BUTTER CREATES DIFFERENT TYPES OF COOKIES – This recipe is really create to suit anyone’s needs and desires in a cookie. Leave the butter warm/hot and it will create a thinner more crispy cookie OR let the butter to cool down in the fridge for a bit (15-20 mins), this will make for a more thick cookie that is soft and yet still a little crispy and chewy. It is made for you to create whatever type of cookie texture you like most I have tried both, and they are each incredible in their own way (depending on your preference).
Everything can be mixed in one bowl to save time and dishes, which make for an easier cleanup. This is a quick and easy recipe from start to finish; therefore be sure to not spend too much time on the prep, mixing, or cleanup. This is a recipe that can be made last minute for date night or a girls wine night in. It is simple for all baking levels when you just want something quick to satisfy your sweet tooth.

4 Tablespoons Unsalted or Salted Butter; melted & cooled
4 Tablespoons Brown Sugar; packed
1 Tablespoons Sugar
1 Egg Yolk
¼ teaspoon Vanilla extract
7 Tablespoons flour
¼ teaspoon Baking Soda
⅓ cup Chocolate Chips
Directions
- Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
- Melt the butter over medium heat, browning if desired taste. Take butter off the heat and allow to cool for about 15 mins. Can also use hot for a more thin and crispy textured cookie
- In a small mixing bowl combine the butter and the sugars and mix well. Add the egg yolk, and vanilla extract and mix until smooth.
- Add the flour, salt and baking soda. Mix until just combined and no streaks of flour remain. Last, fold in the chocolate. Do not over mix.
- Shape into 2 huge cookies or a few medium size cookies and place on your prepared cookie sheet.
- Bake for 11 minutes*, or until the edges are just golden brown and the centers have puffed up but are still gooey.
- Allow to cool for 2-3 mins before taking off baking sheet and enjoying! (since the cookies will be slightly gooey you do not want it to break all over, allow to set for a couple mins)
