CHOCOLATE MOLTEN LAVA COOKIES
Besides the typical classic chocolate chip cookies and brownies, molten lava cakes were, and still are, my favorite dessert ever! My dad made it one holiday evening when we were younger and the idea, as a child, breaking open the cake and letting the “lava” flow out and then enjoy it with a scoop of vanilla bean ice cream, made us fall in love with desserts. We use to get those mixes from William Sonoma and made it a tradition during the holidays. Because my father is not a baker, he would prefer to grill and come up with savory dishes, we stuck to the boxed lava cake mixes until we were able to follow recipes or eventually create our own.
Undercooked baked goods is how every dessert should be prepared; and i’m not talking raw and unhealthy, i’m talking gooey, soft, moist…just to throw out some adjectives of how desserts should be. We were the type of kids to always get a taste of every raw dessert; i.e. cookie dough, brownie batter, boxed cakes etc. but obviously in moderation and not often. Underbaked desserts are way different and make for a more enjoyable dessert. No one wants a dry, crumbly, hard, dense dessert. But enough about that….lets talk about these Chocolate Molten Lava Cookies, absolutely to die for!
They are a little bit time consuming with some freezer time involved but nothing more than 15-30 mins, so it is definitely doable. Make the lava filling first and let them harden in the freezer while making the cookie dough. The cookie dough will also need to be put in the freezer for about 10-15 mins to allow the dough to be easier to work with. Additionally, once finished baking these cookies are very tempting to enjoy right away like a lava cake, and most certainly can be, but I find them to be the best when they are slightly cooled about 10 mins, for the center lava to set a little and not make a huge mess when cutting or biting open.
INGREDIENTS:
Good/high quality chocolate, cocoa powder, all purpose flour, condensed milk, powdered sugar, unsalted softened room temperature butter, baking soda, eggs, and granulated sugar.
TIPS:
- Make sure to freeze the lava filling and the dough so that it is chilled enough to work with.
- Start with the filling so that it can chill in the freezer while you are making the cookie dough
- High quality ingredients are always recommended, especially chocolate, in this case, because it is a entirely chocolate cookie
- Allow the cookies to cool for at least 10-15 mins so that the cookie can set
- You can also make a different flavor cookie such as a sugar cookie, snickerdoodle, peanut butter, regular chocolate chip cookie etc. If you have a favorite recipe that you think will taste amazing with this lava filling, go for it!

- LAVA COOKIE FILLING
½ cup of sweetened condensed milk
60 grams of bittersweet/dark chocolate
60 grams of semisweet chocolate
2 Tablespoons unsalted butter
- CHOCOLATE COOKIE
1 cup unsalted butter, softened to room temperature (2 sticks - 226 grams)
1⅓ cup granulated sugar (300 grams)
2 eggs
2 cups of all purpose flour (260 grams)
⅔ cup cocoa powder (70 grams)
1 teaspoon baking soda
pinch of salt
Powdered sugar for sprinkling when done
Directions
- MOLTEN LAVA FILLING
In a nonstick pan or saucepan, add the two chocolates and sweetened condensed milk and stir over low heat until it melts together and is a shiny mixture.
Add the butter and stir until melted and combined. Turn off the heat.
Take 1 Tablespoon and scoop the chocolate mixture into it and place on a lined baking sheet. It should make about 12-14 chocolate balls. Place into the freezer once done.
- CHOCOLATE COOKIES
In the bowl of a stand mixer, beat the softened butter and sugar together until light and fluffy about 2-3 mins.
Add the eggs one at a time, beating after each addition
Stir in the dry ingredients (a little at a time so it does not fly everywhere) until just combined
Place the cookie dough in the freezer for about 10-15 mins
While the cookie dough and lava filling are in the freezer hardening, Preheat the oven to 375 Degrees F
Once they are done chilling in the freezer, take both of them out. Start assembling: this recipe makes about 12 cookies so distribute the dough accordingly. You just need enough dough to cover the chocolate filling. Grab some dough, flatten it out in your hand, place the lava filling in the center and work the cookie dough up and around it.
Place on a lined baking sheet and bake for about 11-13 mins. Do not overbake! Let cool for about 8-10 mins; Sprinkle with powdered sugar and enjoy!
