DOUBLE CHOCOLATE CHIP COOKIE FOR TWO (SMALL BATCH)
For the longest time I thought double chocolate chip cookies were way too much for me to handle, given that it has tons of chocolate. Therefore, a whole batch seemed to be a waste unless I was giving them away or bringing them to a party etc. I decided if I create a recipe that just makes 2-4 cookies that is the perfect amount to satisfy my chocolate cravings without going overboard on the quantity.
The key to these tasting its best it the high quality cocoa powder, since that is the main ingredient to making double chocolate chip cookies get that rich brown color. I prefer to use a darker cocoa as opposed to the really light ones out there. As well as using a really high quality chocolate chunk or chocolate bar chopped up. Because these are a cookie based around chocolate flavor you want to make sure that you are using all amazing ingredients to get the richest, most flavorful cookie. Slightly underbaking these as well gives it almost a brownie like texture on the inside, gooey, dense yet chewy and very delicious.
The type of ingredients used is always important. I believe that Dutch Processed Cocoa Powder is always the highest quality and best tasting when making chocolate desserts. In addition, using a high quality chocolate chip/chunk will make the cookies taste like a bakery style cookie and give so much more flavor. These cookies are some of my favorite to satisfy that chocolate cravings without making too many cookies. Being able to just make 2-4 cookies seems too good to be true especially when all you want is a quick and easy dessert recipe.

¼ cup unsalted butter; softened (4 tablespoons)
½ cup brown sugar
2 egg yolks
½ teaspoon vanilla extract
3 Tablespoons cocoa powder
¼ teaspoon baking soda
½ cup all purpose flour (8 Tablespoons)
Chocolate Chips
Directions
Preheat oven to 350 degrees F and line a baking sheet with parchment paper
Combine butter and sugar in a bowl and mix until smooth and homogenous
Add in the egg yolks stirring after each addition. Add in the vanilla extract.
Fold in the cocoa powder, flour and baking soda until just combined.
Scoop 2-4 balls of dough and place on baking sheet. Bake for 9-12 mins.
