OATMEAL PEANUT BUTTER COOKIE SANDWICHES

These are the epitome of a homemade Nutter Butter cookie sandwich. They taste almost identical but with a chewier softer cookie to replace the typical crunchy crispy one on the original Nutter Butter Cookies. These are my version of these nostalgic past time cookie; made with a creamy peanut butter filling sandwiched between two crushed up oatmeal peanut butter cookie. My family loves anything peanut butter related, my father growing up (and still does to this day) eats a spoonful of peanut butter everynight before bed. Its almost apart of the nightly routine. Although its turned from Skippys to a more organic nut butter, there is still something so satisfying about a spoonful of peanut butter right before bed that satisfies every sweet tooth craving. 

These cookie sandwiches will likely not last long on your countertop to be able to enjoy one every night before bed but that just means they are that good to not make it past a few days. I guarantee these are so delicious and definitely a crowd pleaser. I have brought these to friend gatherings and are a new favorite amongst my family. They seem complicated because any cookie sandwich usually does not draw a lot of attention because they seem complicated and too much work and time. 

HOW TO MAKE:

These are extremely easy to make with just a few simple ingredients to create these miniature oatmeal peanut butter cookies. The filling is also just two ingredients, peanut butter and confectioners sugar. This is a one bowl recipe, which we all love.

KEY:

The peanut butter that you use is not necessarily important but I typically always use the classics such as Skippy’s or Jiffy Peanut Butter because it gives it that classic peanut butter taste as opposed to the organic, fresh nut butters that you can now find in stores that are healthier and a lot more expensive. I know everyone wants to reach for the healthier versions of nut butters these days but if you are going to indulge in a dessert might as well use the classics that are filled with sugar. 

As for the oatmeal, I am not a huge fan of chunky oatmeal in my cookies, or any dessert for that matter, therefore I typically put the measured-out oatmeal in a food processor and grind it up before adding it to the dry ingredients. It does not need to be a powder consistency like an oat flour, but rather a mix of powder with chunks so that there still is that differing texture in each bite of the cookie sandwich. This is just a preference situation, so if you do prefer your oatmeal cookies with fuller chunks of oats that is completely fine as well and will taste just as amazing. You are more than welcome to also add some chocolate chunks or make the filling a different flavor as well such as a jam (peanut butter & jelly cookies), hazelnut, chocolate etc. 

These can be made into any size cookie that you would like, adjust the cooking time accordingly. I make these with about a tablespoon scoop or smaller so that they are bite size. If you are attending a party or bringing these to an event I recommend the smaller version so that the recipe makes more. The cookie dough does spread out nicely, even though the dough ball might seem extremely small it will still spread out nicely and make a good sized cookie sandwich.

The cookies can be made as small or as large as you want depending on how big you would like to serve your cookie sandwiches or if they are just for you to enjoy it is all about preference. I prefer smaller bite sized sandwiches (more guilt free) so I create about 1 teaspoon sized cookies but have also make 1 tablespoon sized ones as well. You can use your typical sized ice cream scoop as well for larger ones but keep an eye on the baking time and adjust accordingly.

Ingredients

  • OATMEAL PEANUT BUTTER COOKIE
  • ½ cup all purpose flour

  • 1½ cups quick or rolled oats, ground up (keep whole if you like)

  • ½ cup brown sugar

  • ½ cup granulated sugar

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ cup Skippy's Peanut Butter

  • 1 egg

  • 1 teaspoon vanilla extract

  • ½ cup unsalted butter (1 stick), room temperature

  • PEANUT BUTTER FILLING
  • ½ cup powdered sugar

  • 1 cup Skippy's Peanut Butter

Directions

  • OATMEAL PEANUT BUTTER COOKIES
  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper

  • Add the oats to a food processor and grind up until smaller chunks are formed (this step is optional, I prefer ground up oats and not whole pieces)

  • In a bowl, add both sugars, softened butter, peanut butter, vanilla and the egg and mix together. A wooden spoon will work as weill a hand held mixer. In a larger bowl combine all the dry ingredients - flour outs, baking soda, baking powder. 

  • Once the wet ingredients are fully combined, add to the dry ingredients and stir until just combined. 

  • Add about 1 teaspoon of cookie dough to the baking sheet, leaving room inbetween. I have made tablespoon sized sandwiches as well if you prefer a bigger cookie.

  • Bake for 8-10 minutes, add to a cooling rack and let sit until fully cooked before assembling the cookie sandwiches

  • PEANUT BUTTER FILLING
  • While the cookies are baking (there will be several batches depending on the size cookie you are making) start the peanut butter filling. Add both the peanut butter and powdered sugar to the bowl of a stand mixer and let mix until lighter in color and whipped (about 5 mins)

  • Take two cookies, once fully cooled down, and add some peanut butter filling to the center of the sandwich and Enjoy!
