NUTELLA STUFFED COOKIES

Nutella – a word I know most people love. I’ve stuffed just about any dessert you could possibly think of with Nutella just to experiment & I have never been disappointed. It is just one of those ingredients that can be eaten by the spoonful, drizzled on top of ice cream, placed between two desserts (a cookie sandwich) or completely stuffed in the middle like these. There is just nothing like it. I feel like i’m writing a romance novel when I talk about Nutella, but it is a fan favorite for everyone that I know and come in contact with. Chocolate chip cookies are the most classic dessert that is extremely versatile and can be changed by adding so many other ingredients so I tried these out and instantly was satisfied.

As if chocolate chip cookies weren’t good enough for a treat, these are extra stuffed with Nutella to make them even better! Nutella is the best way to make any cookie that much more delicious. These are super goodey, chocolatey with a little bit of crisp on the outside in every bite!

TIPS:

Be sure to spoon our small amounts of Nutella (about 1 Tablespoon), onto parchment paper and FREEZE them. This will make them easier to work with. Nutella is really thick and sticky at times when trying to spoon it carefully into desserts. Therefore, it is important to let sit in the freezer for at least 20-30 mins or longer. It may still be messy, so if time allows, freeze for longer because the more frozen it is the easier it will be to stuff your cookies

The easiest way to fill your cookies is to put some dough in your scoop and spread it out to the sides and form a hole in the middle. Scrape one of the frozen Nutella scoops at a time (I use a small spatula or offset spatula) and put it in the hole that was formed in the ice cream scoop. Then add more dough on top.

THESE CAN BE FROZEN – to save for a later date or you simply do not need an entire batch right away, these can be frozen. Since the dough had melted butter in it, it is a softer dough that is stickier. Pop them in the fridge for a little for them to firm up and place them in a freezer safe bag. Before cooking them at a later date, allow them to thaw before baking.

For a small batch of cookies, it is perfect when the recipe is cut in half! It makes about 8-12 good sized stuffed cookies. Feel free to cut size in half or double if you need more.

Ingredients

  • 1 Cup brown sugar, packed

  • 1 cup butter (2 stick); melted & cooled

  • ¾ cup granulated sugar

  • 2 egg

  • 2 ½ cups All Purpose flour

  • 1 ½ teaspoons baking soda

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • 2 teaspoons vanilla extract

  • 1 – 1 ½ cup of Nutella; divided into several 1 Tablespoon scoops

Directions

  • Preheat oven to 375 degrees.
  • Place several 1 tablespoon scoops of Nutella on parchment paper and freeze until use
  • Melt butter and cool in fridge for 20-30 mins
  • Whisk together sugars and butter
  • Add eggs one at a time & vanilla
  • Add the dry ingredients – flour, baking soda, baking powder and salt, mix to combine
  • Stir in chocolate chips
  • Use your largest ice cream scoop (I use anywhere from a 3-4 Tablespoon scoop) and place some cookie dough in the scoop and form a hole in the center. Place one of the frozen Nutella pieces in the center and add more dough on top.
  • Place 4 large doughs on a lined parchment baking sheet and bake for 9-12 mins until the edge turn light brown Do Not Overbake! They may look under done but once they sit on the baking sheet outside of the over for 5 mins they will be perfect.
