SMALL BATCH BROWNIES
The perfect amount with the most perfect fudgey, flakey top, chocolatey brownies you’ll ever eat. I am not one to leave desserts uneaten, but there are definitely times in which there are desserts that get left behind. I created these in order to make sure its the perfect amount of brownies every time; when all you want is to make a quick and easy recipe for date night, girls night in or movie night. It makes a loaf pan size (8 brownies) where you can divulge into the most gooey and fudgey brownies and not feel guilty that there are leftovers or “you ate too many” because its a small batch. These are a guilt free recipe!
A large pan of brownies are always good to have laying around but not everyone wants that many brownies at once (neither do a lot of us want that temptation). A small batch of any dessert is also a deadly combination but also my absolute favorite to bake when I need a small amount of something in a short amount of time.

1/4 cup melted butter (4 tablespoons)
2 tablespoons oil
1/2 cup chopped chocolate
1/2 – 1 teaspoon of espresso powder (optional)
3/4 cup of sugar (96 grams)
2 eggs
1 teaspoon vanilla
1/2 teaspoon of corn starch (64 grams)
1/2 cup flour (64 grams)
2 tablespoons cocoa
1/4 teaspoon salt
Directions
- Preheat oven to 325 & line a loaf pan with parchment paper or cooking spray
- Add flour, cocoa powder, salt and corn starch to a bowl. Set aside.
- Melt butter and chocolate (and espresso powder – optional)
- Beat eggs, sugar and oil for about a minute with whisk
- Add vanilla
- Pour in chocolate mixture to sugar mixture
- Add in dry ingredients until just combined with wooden spoon or rubber spatula
- Bake for 30-35 mins

What kind of chopped chocolate are you using: milk, semi-sweet, or dark??

I almost always use semi sweet or a mix between semi sweet and dark!

Also, what size loaf pan: 8×4 or 9×5??

Either will work they will still come out the same since the pan is either wider or longer.
